Dough and Icing 101 - A Guide to Baking and Mixing
ABOUT THE TEACHER:
Hi, I’m Emily! I am the Owner and Cookie Decorator of Crumble Catering Co. I stumbled into the world of cookie design in 2015. I didn’t have the slightest clue about the basics of decorating cookies, but I knew I had a passion for baking and a best friend getting married—lingerie shaped cookies, get ready! It wasn’t long before I began receiving requests for custom orders, and I decided to leave the corporate world to make this cookie designing venture my full time business.
While I enjoy dreaming up custom designs for client orders, I have also fallen in love with teaching the techniques from baking to decorating. The best part about a cookie technique class is that it doesn’t matter whether you have a baking background. You just have to be open to learning something new, willing to take on a challenge, and motivated to apply yourself a bit.
I’m so excited to be working with the Level Up community and can’t wait to give you a taste of something sweet!

ABOUT THE CLASS:
Attention sweet lovers: this one is for you!
Join this class and gain insight from Emily of Crumble Catering Co. into best practices for the perfect cut-out sugar cookie dough and royal icing with the softest bite. Your cookies will give you that sugary-vanilla kick you're looking for without overpowering sweetness.
This class includes the following:
- Discussion on ingredient proportions
- Bake time and temperature for a soft but stable cookie
- A live demonstration on rolling and cutting dough to follow along with
- Troubleshooting bake temperatures/timing
- Icing consistencies
- A brief discussion on tips for achieving colors
- Demonstration of cutting tipless bags and basic lines/flooding using a template
- Suggestions for storage
There are no silly questions, so Emily is happy to help troubleshoot along the way!

MATERIALS STUDENTS WILL USE IN CLASS:
Learners will receive a digital download upon purchase, which will include:
- Sugar cookie recipe
- Royal icing recipe
- Suggestions and troubleshooting for best practices
To take your baking and royal icing skills to the next level, take the Cookie Decorating - Hello Fall (Beginner to Intermediate) course offered by Emily.
STUDENTS WILL TAKE HOME:
A batch of cookie dough and a batch of royal icing will be made in this class. It will include demonstrations on cutting, rolling, baking, mixing icing consistencies, and practicing piping/flooding icing. If you do not have a cookie cutter, you can use the rim of a glass or hand-cut with a paring knife.

Minimum age requirement: None
To participate in this class, you must have purchased ingredients listed from Sugar Cookie recipe and Royal Icing recipe in the digital download accessible after enrollment. Other supplies needed: rolling pin, rolling pin guides (optional), saran wrap, large ziplock bag, paper towel, standing mixer, spoon or mini spatula, small mixing bowl, dry and wet measuring cup, measuring spoons, tipless bags, scribe tool/toothpick, scissors.
